Modena's Traditional Balsamic Vinegar

     It is certainly the most famous speciality of Modena and is now highly

     esteemed and appreciated worldwide.  Traditional balsamic vinegar is

     guaranteed by the Consorzio Produttori (consortium of balsamic vinegar

     producers) who not only strictly controls the production process, but also

     tests the product for its organoleptic characteristics and employs expert

     tasters to sample the product to ensure the requisite quality is maintained.

     The consortium also requires balsamic vinegar to be sold in a standard

     bottle stamped with the consortium’s guarantee.

     The consumer is therefore guaranteed of both the quality of the vinegar

     and the length of the ageing process which fall into two    categories: balsamic

     vinegar aged over 12 years is known as ‘Affinato’; balsamic vinegar aged

     over 25 years is known as ‘Extra Vecchio’.  These categories can be

     distinguished by their packaging in two ways. First, ‘Extra Vecchio’ has a

     golden capped-bottle whereas ‘Affinato’ has a white cap; both caps are

     stamped with the symbol of the consortium.  Secondly, ‘Affinato’ is sold in a

     white box and ‘Extra Vecchio’ in a dark box.  The bottles are then labelled

     with the branding of the producer.
