      This Balsamic vinegar is produced in scrupulous observance

      of the organic method. The musts are cooked and acetified

      using a slow fermentation process, obtained from

      organically-grown grapes.

      The subsequent phases of ageing and packaging also

      occur under the careful control of the A.I.A.B.

      Associazione Italiana per l’Agricoltura Biologica, in order to

      guarantee a perfect conformity of the product

      to the strict National and E.E.C. set of rules.
