   The unique characteristics of Modena’s traditional balsamic vinegar

   are the result of centuries old practices in its production.

   True traditional balsamic vinegar is ‘the product obtained from boiled

   grape-must matured through slow acetification by natural fermentation

   and progressive concentration by long-time ageing with no addition of

   aromatic substances.  Its characteristic fragrance is pervasive,

   complex but well balanced and has a pleasant and harmonious acidity. 

   Dark-brown and intense in colour, it has its own syrupy density. 

   Balsamic vinegar has a well-balanced sweet-sour flavour with good acidity

   and a slightly aromatic palate caused through ageing in wooden casks. 

   The lively, sapid, full, velvety, intense and lasting flavour is in harmony

   with its unique olfactory characteristics.’
